Baby Chili Mac And Cheese
- 8 oz dried pasta (any shape)
- 4 tablespoons butter
- 1 cup diced onion
- 2 cloved garlic, minced
- 3 tablespoons flour
- 1 cup milk
- 1 cup Que Gusto! Baby Chili Queso Dip, room temperature
- 8 oz sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper
Cook pasta al dente, and drain. Rinse in cold water and set aside.
In a large skillet, heat 1 tbsp. butter over medium-high heat. Add onions and cook 5 mins. until translucent. Add garlic and cook for an additional minute. Remove onions and garlic from the pan, and set aside.
In the same pan, add the remaining 3 tbsp butter and cook until bubbly. Add flour and cook about 2 minutes, stirring occasionally. Slowly whisk in milk until mixture is thick. Remove from heat and stir in cheddar, Parmesan and Queso Dip. Mix well. Add salt and pepper to taste.
Stir in the pasta and onion mixture until combined. Serve immediately.
